Yogurt Panna Cotta with Mango

 Sweet Mangoes & Yogurt: Healthy Goodness!

An easy and healthy dessert, sweetened and topped with fresh and luscious mangoes!

Serves 4-6

Ingredients

½ plus 1 ½ (2 cups total) cups chopped small, fresh mango
¼ cup water
1 packet gelatin (1 ounce or 2 tablespoons)
1 tablespoon honey
½ cup hot water
2 cups of Greek yogurt (any yogurt will work)
2 cups whole milk

Method

Separate the fresh mango and place the 1 ½ cup section in a covered container in the refrigerator. Whisk together the water and gelatin in a small bowl and let sit for about 3-5 minutes. In the meantime, combine the milk and yogurt together in a large bowl and mix until totally smooth. Set aside. In a blender, combine the honey, yogurt and hot water and puree until silky and smooth. Add the gelatin and mix a few more seconds. Quickly pour the gelatin mango mixture into the yogurt mixture and whisk until they are totally incorporated and creamy. Pour evenly between 6 ramekins or glasses (I like to use stemless wine glasses). You will need room for about 7-8 ounces in each glass plus about an inch of space for the fresh mango. Refrigerate the panna cottas for about 2-3 hours. Divide the remaining chopped mango from the refrigerator between all the panna cottas by placing a few spoonfuls on top of each. Drizzle the mango juice over the top as well. Serve immediately while cold.
