#ChooseYourCut: A Lesson on Mango Cutting

A Crespo Organic Kitchen Cooking Class

Class Description: This class is a no-BS introduction to the top ways to slice and dice a mango (visit this link for a sampling of cuts we may go over). We’re not into the cookie cutter method of doing things. We’ll meet you where you’re at based on your knife skills, mango varietals, and ripeness of the fruit to teach you how to hold your own while cutting your mangoes. We’ll have something for everyone, and we will even show you the advanced Mexican flower method! We will also whip up a few simple recipes putting all of our cuttings to good use (because we hate waste and love these recipes).

KICK IT! (Kids in the Crespo Kitchen) with a Popsicle Class

A Crespo Organic Kitchen Cooking Class

Class Description: Get your kids in the kitchen to learn to make naturally sweetened mango popsicles. We will “kiddify” our usual mango education, showing them how to cut mangoes using “the mango hack” but stick around because your kids will need an adult present. (Trust us, you’ll probably learn something, too). Note: We don’t use much sugar in this class. The kids will undoubtedly love them just the way they are. Also, it doesn’t matter if you have popsicle molds or not (if not, any old [clean] ice cube tray or cleaned yogurt cups will do), but we do recommend buying an inexpensive set online. They are so much fun for kids, and it may encourage them to eat more fresh fruit.

Class Description: Learn to make three mango-centric summer salads that will wow everyone this season and beyond. You’ll get refreshed with our everyday mango education, learning about how the Tommy Atkins varietal’s and its firmer flesh works wonderfully for salads. We will teach several different ways to cut mangoes and prepare three amazing seasonal, inexpensive summer salads that can feed a hungry and even fancy crowd. You’ll walk away better equipped to optimize not just mangoes but vegetables, fruits, vinegars and citrus juices, keeping salads fresh, light and healthy!

Summer Mango Quenchers on Zoom!

A Crespo Organic Kitchen Cooking Class

Class Description: In this class, you’ll learn how to make thirst-quenching summer mango drinks out of this summer’s bounty of mangoes! Here we will teach you how to whip up our favorite mango thirst-quenchers, perfect on a hot summer’s day. We’ll teach you how to prepare a light fruit-herb fermentation, how to add spice for depth, how to utilize coconut water for maximum hydration, how to create a mango pit syrup for iced tea, and we’ll show you our famous Mango-schino Cherry recipe. This class will demonstrate that you don’t need alcohol to have a good drink. In fact, nonalcoholic drinks can be more refreshing, more hydrating and less depleting of vitamins than alcoholic beverages; not to mention, they won’t make you sleepy in the heat. All of our classes will provide some basic mango education, such as how to choose, store and cut mangoes and a little bit about mango varietal nuances, as well! We’ll also discuss how to pick and choose your flavor pairings and potencies.

Recipes to be Made: (Lightly) Fermented Mango-Peach Herbal Punch; Mango-Lime Coconut Fizz; Sparkling Cherry-Limeade sweetened with Mango Pit Syrup, Mango-schino Cherry Garnish; Rose & Mango Earl Grey Iced Tea

Smooth Transition North

Oaxaca, Chiapas, and Nayarit line up for consistency in supply

By nature, transitions can be tricky. Shifting from the southern regions to the northern regions is typically unpredictable and complex. This year, it is proving to be exactly that.

The southern regions have produced a good amount of fruit, mostly on the smaller side and mostly because people like us (Crespo) have strategically increased our orchards there, in order to gain greater volume earlier, capture a bigger percentage of market share immediately, and jumpstart consumer demand sooner. There have been complexities as usual but we maneuver through them fairly well, mostly because of the direct-trade relationships we have with our customers, and the communication and exchange of information on the challenges and opportunities in advance allowing us to together, strategize, knowing each customer and region has different needs.
