Our healthy & easy to make Mango & Chicken Salad Sandwich #recipe is the perfect choice for a lunch box or after-school snack🥭🤩!

Ingredients:
¼ cup fresh mango pure, thick version
½ cup yogurt
2 tablespoons Dijon mustard
2 teaspoons chopped-fine fresh jalapeño
1 tablespoon lemon juice
1 teaspoon lemon zest
2 tablespoons chopped fresh parsley
¼ cup chopped fine red onion
2 teaspoons kosher salt
1 teaspoon cracked black pepper
hot sauce (optional)
2 cups roasted or rotisserie chicken, cubed or shredded
lettuce, spinach or spouts
bread

Method:
Whisk together all ingredients except the chicken, lettuce/spinach/spouts and bread in a small-mixing bowl until smooth. Taste the dressing adding salt or pepper or hot sauce until you get your desired taste. Place the chicken in a medium mixing bowl and pour the dressing over it. Gently mix together the dressing and chicken until thoroughly mixed. Refrigerate the salad for at least a half hour before serving, ideally 1 hour.

Assemble you sandwich as desired with the bread, lettuce, spinach or sprouts!

A good mango display is much more than just #MuchosMangoes it is a sweet spot for consumers to engage in and extract optimal #MangoJoy. This past season Crespo Organic Mango retailers created multiple big, bold, front and-center, vibrant displays and placed them throughout their stores, attracting shoppers with attractive price points and bounty. Secondary displays, smaller displays and GIGANTIC front and center store entrance displays peaked consumer interest all summer long. Variety proved to attract even more shoppers with a plethora of choices including the opulently banded Crespo Organic Specialty Mallika, Nam Doc Mai and Keiw Savoy mangoes. Cross merchandising was abundant. Crespo’s signature education and recipe cards offered insight and intel. Crespo Mango bins rang up record QR code scans and retailers offered up lots of tastings and demos, to entice mango lovers on the spot. The Crespo Organic Dried Mango line, propped up like sweet soldiers on almost all our retailers displays gave shoppers a chewy, succulent (shelf-stable) reminder of the versatility of mangoes.

Use the pit’s too!

Back to school season can be a whirlwind. Make it a little sweeter with mangoes all September long with one of our favorite kitchen tricks!

Freezing mangoes is easy and a great way to have mangoes on hand without having to worry about them getting over ripe. It’s also the best way to prolong the Mexican mango season as it comes to an end and enjoy mangoes well into fall!

🥭 Cut the cheeks off of your mangoes. Depending on how ripe they are choose you’re favorite cut. Slice your mangoes into the desired size. Cubes, slices, chunks. Think about how you will use your mangoes and cut accordingly!

🥭 Place slices in a single layer if possible or as flat as you can in your freezer safe bag. Place your freezer bag flat in the freezer so your mangoes don’t freeze in one big chunk.

Pull mangoes out of the freezer and use as many as you need for your next recipe! #BackToSchool #ChooseYourCut
