Authentic Mexico, Mangonadas from Scratch

A Crespo Organic Kitchen Cooking Class

Class Description: This is a very special class to cap off Mango Mania, where we’ll make our favorite Mexican street drink – the Mangonada – and all its components from scratch, including Homemade Chamoy and Tamarindo Candy Straws. Bright orange mango sorbet with chamoy rippled throughout and topped with fresh mangoes. The mangonada is a summertime staple in Mexican communities and the Crespo Organic Kitchen is going to take a stab at making it from scratch, right along side you!

We will make the chamoy from scratch—a savory, lightened pickeld condiment made from dried stone fruit. We will even make our own house Tajín seasoning (a lime-flavored chili powder). And the signature candy tamarind straw too, we wont forget to make that too!

Most of the stuff you’d buy from the store today is so laden with salt, sugars, processed-everything that we want to recreate this incredible treat the old way (which is also the healthier, fresh way).

Class Description: Crespo Organic’s hometown is ceviche heaven. This class pays homage to the king of ceviche. We’ll go over proper mango cutting methods for ceviche, how to select your fish and any other ingredients for maximum freshness. On Nissa’s last trip, she picked up a few tips and tricks and a special hot juice that she’ll show you sets this ceviche apart. You’ll learn how to make a simple and fresh ceviche using tuna, mangoes and avocadoes, plus a new recipe inspired by our Mazatlán roots! We’ll also make her favorite Mazatlán Pueblo Bonito beach drink – the virgin piña colada – which pairs perfectly with these summer ceviches.

#ChooseYourCut: A Lesson on Mango Cutting

Class Description: This class is a no-BS introduction to the top ways to slice and dice a mango (visit this link for a sampling of cuts we may go over). We’re not into the cookie cutter method of doing things. We’ll meet you where you’re at based on your knife skills, mango varietals, and ripeness of the fruit to teach you how to hold your own while cutting your mangoes. We’ll have something for everyone, and we will even show you the advanced Mexican flower method! We will also whip up a few simple recipes putting all of our cuttings to good use (because we hate waste and love these recipes).

KICK IT! (Kids in the Crespo Kitchen) with a Popsicle Class

A Crespo Organic Kitchen Cooking Class

Class Description: Get your kids in the kitchen to learn to make naturally sweetened mango popsicles. We will “kiddify” our usual mango education, showing them how to cut mangoes using “the mango hack” but stick around because your kids will need an adult present. (Trust us, you’ll probably learn something, too). Note: We don’t use much sugar in this class. The kids will undoubtedly love them just the way they are. Also, it doesn’t matter if you have popsicle molds or not (if not, any old [clean] ice cube tray or cleaned yogurt cups will do), but we do recommend buying an inexpensive set online. They are so much fun for kids, and it may encourage them to eat more fresh fruit.

Summer Mango Quenchers on Zoom!

A Crespo Organic Kitchen Cooking Class

Class Description: In this class, you’ll learn how to make thirst-quenching summer mango drinks out of this summer’s bounty of mangoes! Here we will teach you how to whip up our favorite mango thirst-quenchers, perfect on a hot summer’s day. We’ll teach you how to prepare a light fruit-herb fermentation, how to add spice for depth, how to utilize coconut water for maximum hydration, how to create a mango pit syrup for iced tea, and we’ll show you our famous Mango-schino Cherry recipe. This class will demonstrate that you don’t need alcohol to have a good drink. In fact, nonalcoholic drinks can be more refreshing, more hydrating and less depleting of vitamins than alcoholic beverages; not to mention, they won’t make you sleepy in the heat. All of our classes will provide some basic mango education, such as how to choose, store and cut mangoes and a little bit about mango varietal nuances, as well! We’ll also discuss how to pick and choose your flavor pairings and potencies.

Boots On The Ground (Flipflops Technically)

Under the Crespo mango trees, I find efficiency, ingenuity, mango joy and #muchosmangoes

 The “Propaganda Lady” is what they called me last week at Empaque Don Jorge, as I walked around with my mask and hairnet snapping photos and filming staged and impromptu videos. I’ve learned to see the big smiles in the eyes of so many masked strangers. The extreme warmth of the packing house was more than the intense Sinaloa summer heat. It was, as I say in much of my “propaganda,” #PuroMexico #PuroAlegria! A warmth like no other. I loved every moment of my time there.

Propaganda is Spanish for marketing, and it makes me giggle, and reminds me of the simplicity and clarity that most other languages employ. English on the other hand seems sneakier, using multiple words to describe the same thing, but choosing one or the other depending on what is to be propagandized.  In Spanish, propaganda simply suggests that whatever the messaging is, it often has another purpose – in this case, to educate customers about our mango production process and about mangoes generally

Mazatlán is the ceviche capitol of Mexico. Every season I head down to Empaque Don Jorge I indulge in all the wonderful fresh seafood variations of this dish and pack my suitcase full of ideas to bring back. Then I indulge myself and recreate all my favorite flavors and textures, many of which are new to me. I discover another dish or nuance every time I go, and this last time my suitcase was packed full.

We Got Sauce!

And two new recipes to use it on!

I have been working in the produce industry for about 25 years now and very few industry folks are familiar with my other career  in food; specifically culinary education, food writing and recipe development. I have published countless recipes and written extensively on how to choose and use almost every varietal of vegetables and fruits as well as many other food items. I have taught everyone from kindergarteners to Wholefoods executives about organic, sustainable, local and fairly traded fruits and vegetables and, most notably, herbs.

My produce roots are strong in fresh herbs, as is my culinary strength. It’s fair to call me an herb expert (also fair to call me a mango expert) in the culinary world and those that know my herbal prowess know that above all else, I am a sauce master. I’ve made hundreds of sauces  in my years and I make them all exceptionally good and rarely the same. So, it’s no wonder when I started working with Crespo Organic mangoes and developing recipes for the Crespo Organic Kitchen, sauces would materialize. And that they did!
